What a wonderful feeling! It’s almost Springtime here is St. Louis, MO and we hope it is where you are, too! It was a rough winter in much of North America. If you’re like us, you have plenty of outside projects and fun activities just waiting to happen. We’re hearing from most of our Project Managers that they are very busy and building considerable backlogs. So, if a new roof might be in your future for this year, we suggest acting sooner rather than later.
Our subject line promised something tasty. Last summer, in one of our most popular and forwarded e-newsletters ever, we shared a couple of great summer recipes. We figured we would start off this spring with a recipe as well that is as tasty as it is fun to prepare.
SOY-MARINATED PORK SANDWICHES
This recipe is good for four great tasting sandwiches but can be adjusted for a larger quantity.
Marinate 12 ounces of very thinly sliced pork tenderloin in the following for 15 minutes at room temperature:
1-1/2 tablespoons brown sugar
1-1/2 tablespoons low sodium soy sauce
2 teaspoons minced garlic
½ teaspoon crushed red pepper
¾ teaspoon sesame oil
Meanwhile, combine the following and allow it to marinate:
2 tablespoons rice or white wine vinegar
1 teaspoon canola oil
¼ teaspoon sugar
1 cup shaved carrot
Next, heat a large skillet over medium-high heat. Add 1 teaspoon canola oil followed by the marinated pork and its sauce. Cook 3 minutes or until done, stirring occasionally.
Place 4 whole wheat sandwich buns, separated, on a baking sheet, cut sides up. Place on top oven shelf and broil for one minute or until lightly toasted.
Create your wonderful sandwiches by placing pork followed by carrot mixture on each bun. The pork has a fair amount of heat from the red pepper but the cool carrot mixture balances it wonderfully. We would love to see photos of your tasty creation! Enjoy!
